20 Jun In the Kitchen: Healthy Breakfast Sandwich
Breakfast is where most people struggle. We either skip it because it’s easy or we eat something that is considered more of a snack than a meal. This month break the cycle of whatever you are or are not eating, and give this simple and healthy recipe a try.
– English Muffins (my fav is the Rudi’s organic multigrain)
– 1-2 Eggs (per person)
– Organic, uncured turkey bacon
– Ricotta cheese
– An egg shaper (if you have one because it makes the eggs look pretty)
Fry up the bacon in the skillet to your desired degree of crispiness and set aside on a paper towels. Sauté the spinach to your liking and set aside. Pop the English muffins in the toaster and then get the eggs going. When they are cooked to your liking, spread the ricotta on the muffins, layer with bacon and spinach, and the eggs and…enjoy!
